The Gyokuro is one of the best teas in Japan. In order to produce it, the tea bushes are kept 90% in the shade for 20 days from the beginning of May. The reduced light means that the small leaves contain more chlorophyll but less tannins. The tea becomes mild and has a sweeter, milder taste. Gyokuro is only harvested once a year, as shading weakens the plants and they then need rest. The tea consists of wonderfully flat, pointed, emerald green needles with a sweet “umami” taste.
